The Allen Center in downtown Houston is a long-standing, multi-building complex that is going through not only remodeling but re-identification. The social anchor for the new Allen Center will be the C.Baldwin Hotel. A high end and hyper-localized, independent hotel that will include Rosalie, an Italian restaurant by Top Chef Masters, Chris Cosentino.

Cosentino, who has concepts in San Fransisco and Portland, says he is honored to be working here in Houston. The restaurant, named after his great grandmother, revolves around everything she taught him about Italian cooking. “She lived the Italian way in America,” says Cosentino who will be using her marinara and meatball recipe.

My job is giving taste memories!

Although the menu is still in the works, be prepared for daily hand made pasta and complex yet unintimidating dishes. “It’s approachable, I don’t need to teach you how to eat it. You don’t need a language lesson to order” says Cosentino. That same welcoming attitude applies for not only the menu but the restaurant as a whole.

The design team used Rosalie’s 1970’s kitchen as inspiration, with family-style tables, Italian mid-century modern accents and more. All of the furniture was designed specifically for Rosalie with Cosentino having a hand in every detail.

Rosalie will serve breakfast, lunch, and dinner daily. The team will also manage the Lobby Bar, a lounge, a grab and go counter, room service (dubbed “Delivery”) and all private events and meetings in the hotel.

The C.Baldwin hotel will be opening in Summer 2019 and Rosalie in the Fall.
