Houston mom Kelly Barnhart realized that while raising her daughter there was one question that was driving her “would this enhance or detract from her vibrance?”. Not a restauranteur or chef, but a former art curator, Kelly knew there a void in Houston for healthy eating without sacrificing aesthetics and culture.
Opening to the public today (Monday, 8/27) Vibrant offers a menu that is gluten, dairy, refined sugar and GMO free! If you read that and are worried you will not be intrigued by the menu, you are wrong. Kelly went above and beyond to ensure her menu wasn’t only good for you but craveable!
Breakfast is served from 7a.m – 4p.m and includes Baked Egg Skillet, purple cabbage, shallots, caraway, house-made chicken sausage, avocado, house-made sunflower seed ricotta, 2 pasture raised eggs any style; Sweet Toast – house made teff bread, vanilla-cardamom cashew butter, walnut dukkah; Coconut Chia Pudding, caramelized banana, cacao nib buckwheat crumble and almond butter drizzle and many more!
The idea with the extended breakfast hours is that everyone leads a different lifestyle and enjoys breakfast at different times of the day. Lunch overlaps starting at 11a.m and features A lush Rainbow Carrot-Radish Salad pairs rainbow carrots, watermelon radish, pistachio, house-made sunflower seed ricotta, mint, urfa pepper and Meyer lemon; Carrot Ginger Soup takes its cue from apple, ginger, toasted seed topping, cumin seed oil and micro cilantro and A Salmon Rice Bowl made with heirloom rice blend, salmon, green beans and herbs gets a kick from a lemon caper dressing.
