Rosie Cannonball is the newest of three Goodnight Hospitality concepts, is excited to share with the public their delicious cuisine, fine wines and cocktails, and unbeatable atmosphere. Their selectively curated menu is inspired by individual ingredients directly from Goodnight Hospitality’s farm located on the outskirts of Houston and from locally sourced seafood and meats.
The team of inspirational chefs at Rosie Cannonball incorporate their experience cooking in restaurants all over the world from Portugal and Italy to Spain into their dishes. The mix of locally sourced Houston food and worldly techniques combines to create a uniquely delicious menu.
The delectable menu starts with appetizers such as a warm flatbread with mortadella and robiola cheese and salads topped with fresh smoked trout roe and a creamy sherry vinaigrette. Included on the menu is a vegetablessection that features grilled mushrooms with lemon, egg yolk, and chiles. Five premier pizzas will be offered from simple Pepperoni and Smoked Trout to Lira Rosa Three Cheese.
Executive pastry chef Shawn Gawle curates the delicious breads and desserts for the restaurant. Gawle incorporates fresh ingredients from the farm to create fresh gelato and six other dessert options including a warm Basque Cheesecake.
Experienced Sommeliers David Keck and June Rodil have curated a delicious list of wines and cocktails with Italian, Spanish, and French influences that mirror the focus of the food.
The space was designed by Studio Robert McKinley with inspiration from beautifully designed restaurants in Italy to create effortless architecture integrated with unexpected touches. The restaurant is situated around a wood-burning grill and open kitchen covered in crimson mini tiles reflecting Italian bars in the 60s and 70s. The walls of the space boast beautiful paintings by the talented Donald Robertson and limited-edition prints from legendary photographer Tony Vaccaro.
Even the uniforms at Rosie Cannonball convey the personal aesthetic of this unique restaurant. Rich Fresh has designed a line of uniforms for servers, managers, bartenders, and chefs that convey luxury and comfort. Fresh studied the personality and style of restaurant owners Pete and Bailey McCarthy for a year in order to create a line that reflects the couple’s goals for the restaurant and is professional and approachable.
Visit Rosie Cannonball Tuesday to Saturday 5 pm-“late” with lunch hours coming soon and on Sunday 5 pm-“late”. Stop by for a dining experience that is comfortable enough for an any-night dinner and extraordinary enough for a special occasion.
